Whisk together in a medium bowl until well blended:
2 c all-purpose flour
1 Tbsp baking powder
1 Tbsp sugar
3/4 tsp salt

Add and stir until a soft dough forms:
3/4 c warm water
1 Tbsp vegetable oil

With lightly floured hands, knead the dough just until smooth and slightly elastic, about 1 minute. If kneaded too much, the dough will be difficult to roll out later.) Place the dough in an oiled plastic bag and refrigerate for 1 to 2 hours (I think it’s easier to put oil on my hands and pat the outside of the dough, then wrap it in plastic).
Divide the dough into 12 pieces. Flatten each piece with your hand into a 3-to 4-inch round. Cover with plastic wrap and let rest 10 to 15 minutes. On a lightly floured work surface, roll each piece into a very thin round 7 to 8 inches in diameter. Poke a hole in the center of each round with your finger.
Heat to 375 degrees F in a pot or skillet at least 10 inches wide:
2 to 3 inches vegetable oil

Slip 1 round at a time into the hot oil and fry until puffy and light brown, about 1 minute per side, turning with tongs. Drain on paper towels. Drizzle with honey or sprinkle with confectioner’s sugar.
